GLUTEN-FREE CHEESE PASTRY

Ingredients

  • 200 ml water
  • 40 g yogurt
  • 30 g olive oil
  • 10 g homemade apple cider vinegar
  • 10 g psyllium (plantain seed)
  • 5 g salt
  • 10 g baking powder
  • 500 g gluten-free flour

PREPARATION

Place all ingredients except for the flour into the bowl of a dough kneader. Gradually add flour until you achieve a smooth, flexible dough that lightly sticks to the hands. Since the dough is gluten-free, it's recommended not to knead it for more than 5 minutes. Once the dough is ready, refrigerate it at +4 degrees  Celcius for 30 minutes to rest. Meanwhile, prepare the filling. After the dough has rested, divide it into 100-grams portions and roll out thinly into sheets using flour. Aim to obtain approximately 8-10 sheets of pastry. Grease a baking tray. Spread a layer of liquid pastry mixture onto each sheet, add the filling including Muratbey Lor cheese and Muratbey Plus Cheesoft, Then roll it up into a log, ensuring it's neither too tight nor too loose, then place it on the baking tray. Repeat this process for all sheets until the tray is filled. Finally, brush the tops of the pastries with the liquid pastry mixture and bake at 170 degrees until the surface is well-browned, about 30-35 minutes. Serve hot. Enjoy your meal!
