After cutting unsalted Muratbey butter into cubes, let them chill in the freezer for at least 15 minutes. Place 2 to 3 ice cubes in 1/2 cup of water and let cool. Put the flour, salt, and butter in the food processor (or in a food chopper) and pulse a few times to combine. Add 1/2 Muratbey butter to flour, and pulse 6 to 8 times, then add the remaining butter and pulse again 6 to 8 times. At the end of this step, the dough and butter will form pea-size crumbles. Add 2 tablespoons of cold water and pulse 1-2 times, then process until desired consistency, adding 1 tablespoon water at a time. About 4 tbsp of water is enough for this recipe. Pinch off small pieces of the dough, if they stick together easily, you are good to go. Pour the mixture from the processor onto the counter and knead with your hands until the dough forms. When the dough is combined, wrap it in cling film and let rest in the fridge for 1 hour. While the dough is resting, place the milk, cream, salt, and eggs into a mixing bowl and beat the ingredients using a balloon whisk. Add the thinly sliced spring onions, chopped parsley, and grated Muratbey Braided Cheese and stir using the whisk. Remove the dough from the refrigerator and turn out onto a floured counter. Roll out the dough very thin and cut circles out of the dough using the back of a round bowl to fit in the bottom of muffin tin cups. Grease the muffin pan with Muratbey butter, transfer dough circles to the cups of the pan, pressing into the corners and up the sides of each cup. Once you lay a circle of dough onto each cup, fill each cup with quiche filling distributing the batter evenly. Sprinkle the grated Muratbey Plus Fresh Kashkaval Cheese on top of your dish. Preheat the oven to 200 degrees and place the pan on the bottom rack, which is close to the heat source. Bake until lightly browned on the bottom and golden brown on top, then, carefully remove the quiches from the pan and serve warm.
